You can use any of your favorite bread recipes to make your own cloverleaf rolls! These rolls bake quickly and make a nice addition to a festive holiday table...or to a chilly evening when you are serving stew, soup, or chili!

They are easy to handle---and make great dunkers!

Make your favorite bread recipe (or thaw out the pre-made bread dough you can buy in the freezer section of your market). Allow the bread to rise through the process until you would otherwise form the bread loaves and set them to do a final rise.

You'll need:

  • Bread dough
  • Cupcake pans
  • Non-stick spray
  • Bread knife

Cut the bread dough into a generous walnut-sized piece. Form it into a ball. You can just "roll" it around a floured pastry cloth (as shown here).

Spray the cupcake wells with non-stick spray (do not use cupcake papers).

Put three small balls of dough into the cupcake well.

Now, set the cloverleaf rolls to rise.

As you can see here, my favorite "warm spot" is an electric heating pad, covered with a thin cotton kitchen towel.

Allow the rolls to rise until they are just starting to puff out of the top of the cupcake wells.

Bake at the temperature called for in the bread recipe. Check at about 10 minutes. Turn the pans to insure even baking. Check again in about 5 minutes. When done, rolls should fall out of the cupcake wells and be lightly browned on top and bottom.

Be sure to have a tub of butter handy...you won't be able to resist slathering one of these with butter!
